Banana Bread (which is actually cake, not bread)

Classic & easy

Ingredients:

4.4oz/125g Butter

5.2oz/150g Golden caster sugar

1 tsp Vanilla extract

1 egg, beaten within an inch of its life

2 very ripe Bananas

6.7oz/190g Self raising flour (we like things that are self-sufficient)

1/4 cup/2oz/60ml Milk ~ OR replace the milk with rum (Appleton is THE best)

1 tsp of Pimento (or mixed spice)

1-2 tbsp Demerara sugar for top

4oz/which is like, 113.something g’s, gah whatever, just throw a ton of chocolate in there! And make it Bournville.

(Walnuts/or any other nuts you have are optional. I refuse to work out how many for you. A handful. Depending on how big or small your hands are will determine how nutty your Banana cake is).

Method:

  • Grease or line (people who do both are psycho) a 2 lb loaf tin
  • Melt butter & mix with sugar & vanilla until smooth
  • Add mix to mashed bananas
  • add beaten egg & milk(rum) & mix together
  • sift in the flour and combine
  • rough chop chocolate and stir into the mix
  • Add nuts now if using
  • pour into the tin, sprinkle top with girl Dem sugar
  • Bake at 350°F/170°C/Gas mark 3 for 35min or until a skewer comes out clean
  • Cool in tin before turning out on a rack
